each one is a "mask" to decrypt certain parts of the book.
the stars signify what "caracters" youd keep. red means you discard the letter
by using the stars pattern on various pages youll get a "veritcal" slice of the intended page(working theory is this was meant to be visually decyphered or read by the owner)
the back of the book is an "index" to teach you how to read it.
my process may bunk, but 103, ran with the star pattern from each page going forward.
this process has lead me to believe that 103 is detailing a distillation or pressurized burnoff. like ye ole material science
i have a strong presumption that this is latin through a grille cypher. using multiple cyphers per page would mean no one else could naitvely read the book
