I didn't read the whole papers, but I looked at some of the pictures. I found Figure 7 in "The Geographical Origin" interesting. It says that there is a cross at the top of a building left of the NE Rosette.

I only see it that way in part.
Taking into account that the books were copied again and again, and that for 1000 years, one should judge the text with the drawing and the real plant.
For me, the original, which also has or had something to do with medicine, always comes first.

Finding a resemblance to real plants is wishful thinking, the example of peucedanum, recently provided by members of this forum, proves it.

Let's hope the label says the same thing and the scribe didn't draw spirea to describe peanut or nutsedge or some other tuberous plant.

That was perhaps not a good example.
Here you also have the Greek name and drawing.
That sums it up pretty well.
But what does the Greek name really mean?

It looks like the side view of this object (in principle), obviously not a cross.

The "cross" could be a weather vane, which would suggest it may be a church/cathedral roof, and I believe more likely to be European

The others I think are anyone's guess, the bottom image has a bit of "weathercock" look about it I guess but could be chimneys / flags
