As far as I know, this kind of fantasy is an anachronism for the Middle Ages.
Voynich also doesn’t look like a work of fiction, judging by the illustrations. It resembles an encyclopedia. If this is a work of fiction, then they hired a very poor illustrator. Or, alternatively, most of the book consists of a description of a fictional world, and all the plot lines are crammed into the end.
So, such a theory is very unlikely...
BUT! VMS may be a magical book or part of some magical practice. This could explain its unconventional nature, its scarcity, and also why it is written in an incomprehensible language with incomprehensible illustrations. This is similar to the glossolalia theory, but the most suitable theory is Book of Soyga, specifically the tables at the end. They were created thanks to a special algorithm, but their purpose is unknown. The VMS text also seems to have been created thanks to some kind of algorithm (the same self-citation).
