Your observation, I think, is an important one. Gallows are indeed over-represented as paragraph-initial letters - and also page-initial.
Out of the first 50 pages of the herbal, 49 start with gallows. (The 1 that does not is a benched gallows.)
What is the reason for that? What system (or language) could produce that result?
