Why do we think the Voynich manuscript has multiple scribes?

It actually matters quite  a lot if the manuscript was created by one person vs. a community. If multiple scribes wrote the text (which doesn't mean each scribe is also an AUTHOR...that remains to be seen), underlying meaning becomes much more likely and the function of the manuscript can be interpreted differently as well.
