Or it could be like the related Chenopodium species where instead of berries it is just seeds.
The sunflowers have me a bit stumped but the red one might be Celosia of the cockscomb variety. maybe the others are things like carnations, marigolds, or chrysanthemums; big frilly flowers?
Tubeflowers, I think are racemes or corymbs of tiny flowers. I think the central one might be Tanecetum vulgare, despite the blue colouring. I have one about to bloom, the flowers are actually dark right now, and smaller than they will be. If we really must correlate VM plants to real ones, I think we should stick to those which are attested in contemporary herbals. Some of the plants you proposed are not native to Europe.
Chenopodium/Blitum species bearing red fruit are mostly of American or Asian origin and naturalized in Europe. Blitum virginatum grows in Europe but is rare and not known as medicinal plant from any herbals to my knowledge.
Celosia argentea is native to tropical Africa. The cristate variety arose in cultivation in Asia.
There is no doubt the VM artist was inspired by other herbals, but I do not believe the drawings depict real plants, as they are likely composites. Which plant is it supposed to be if the artist coped flowers from plant A, leaves from plant B and roots from plant C?

That’s exactly how I see it now, too. On top of that, there’s a generous dash of “artistic interpretation” when it comes to the individual plant parts.

It would be interesting to have a functional version of something like this for each plant in the “Botany Section.” The individual plant parts could be simplified schematically so that one diagram would work for multiple plants. The more plants parts that can be grouped together, the better.

No idea what to do with it, though being able to compare herbal to pharma is useful...

Right now, I'm experimenting with the roots to rearrange the plants in the VMS. I'm using Grec 2183 as a reference (You are not allowed to view links. Register or Login to view.). What interests me is how often such changes result in the greatest possible similarity. Here's a quick example (I'm sure I can do better).
