I've never really used Discord and don't know much about it. What advantages would the platform offer?

For me it's a platform where you can (briefly) talk about VMS topics without going into too much depth. A kind of "general chat thread" with reference to the VMS, so to speak.

But what if that Discord server grows, and people start posting actual, useful research there? Is there any way to have the chat logs and discussions from Discord easily available on the web?
The thing with blogs or forums like this one is that, although posting here is a slower means of communication, all these online discussions are periodically being logged on the web for posterity, and readily available for any future researcher. Any significant breakthrough on this MS is bound to stand on decades of previous work, we really should try to keep all of our research backed up online as much as possible.
Just to illustrate one of the disadvantages: Discord would make it harder to find if topic or feature X of the MS has been already researched by somebody - unlike posts like these, chats don't pop up on search engines.

Discord is for instant messaging, and you are always one click away from joining a voice chat room.
You can quickly share files, images, etc.
Sort of like an IRC chat on steroids.
It works on every device as far as I know.
I can see it being useful as a teamwork tool or simply for having a few beers together in a voice/video room, but not as a replacement for a classical forum.
I only use it for voice chat when gaming. It is pretty solid.

Somehow it does, although "Stammtisch" actually has a negative connotation.
Yes... It would to me, but obviously not to everyone.
And it is very far from a global thing.
I assume that it won't be as bad as the things that one can read in the comments to youtube videos about the Voynich MS. This is regardless whether these videos are professional TV productions or private productions.
