I'd be careful with that approach to geolocation. With cattle it's of course valid - where you have vellum, there you have cattle, but as for languages - this neglects the travel factor. E.g. a person from Spain could well have relocated to e.g. Italy, and what underlay language he would use, that would depend on a number of factors, some of which may be even internal to the MS itself - like the subject topic.
