In my opinion f67-v1 represents the Cosmos. 
On the outer circle: God and the Trinity (Father, Son and Holy Spirit). 
Inside the circle the heaven/sky and the Earth. In the center the Aether (Quintaessence).

The Father is represented by a P: Pater.
The Son is represented by a cross.
The Holy Spirit is usually represented by a dove. In the case of the VM it uses a 7 (seven).
It is a reference to the You are not allowed to view links. Register or Login to view.: wisdom, understanding, counsel, fortitude, knowledge, piety, and awe of the Lord. The seven gifts are found in the Book of Isaiah 11:1-2.

The Son comes to Earth while the Father and the Holy Spirit are related to heaven/sky, represented by the Sun.

God is represented as a T-O map in the bottom left. Inside it there is a U (unus), three different persons sharing one essence. Each of its parts as an element of the Trinity. Which part/color correspods to each element of the Trinity? This question is opened.

The central detail shows a circle. Inside it the drawing suggests circular movement and the aether flows in the four directions.
Aether, also known as the fifth element or quintessence, is the material that fills the region of the universe beyond the terrestrial sphere.
Aether naturally moved in circles, and had no contrary, or unnatural, motion. Aristotle also noted that celestial spheres made of aether held the stars and planets. The idea of aethereal spheres moving with natural circular motion led to Aristotle's explanation of the observed orbits of stars and planets in perfectly circular motion.

In medieval western Europe there was a discussion to explain the motions of the celestial spheres: Were they moved by angels or another intelligence? Was God who impressed them a circular impetus? ...
At first glance, I think something about this is a bit awkward. The VM diagram is essentially tetradic: four "things" on an equal level, arranged around the centre. Think the four winds, the four cardinal directions, the four seasons. As the shield of the Trinity shows, it makes sense to place the Father, the Son and the Holy Spirit on the same level, with God in the middle. In your proposal, however, the unity is placed on the same level as its parts, which is strange. It's like saying "the year consists of five parts: summer, fall, winter, spring and the year".

You are rigth, it is a bit awkward, I think that they tried a vision of the Cosmos created by God and at same time they wanted to show God as The Trinity. They draw the Cosmos is in the center and God/Trinity surrounding it. The Shield of Trinity inspired part of the composition.
Well, there is clearly 'something' going on here. The trick with the little faces, and the obfuscated letters is proof of that. And it adds another example to the growing set of VMs images with good probabilities for religious interpretations.

It can only be that this is a four-way interpretation, not triangular. There are the two little representations of the sun. And then the two others. Are they Earths or are they moons?  Could the Earth be in the center?

I would question somewhat the VMs artist's knowledge of "science" as it was presented in the Middle Ages. The use of the inverted T-O model with 43 undulations as shared by the Oresme cosmic image [BNF FR. 565] is far from the current "knowledge" of the time. In addition, the parts of the VMs image have been manipulated and the whole thing then stuffed inside of Shirakatsi's wheel. This is not a sincere attempt at accurate science on the part of the VMs artist. This is trickery.

So, the problem here is, is this trickery? Or is this something that needs further investigation in hope of yielding greater insights? Or is 'rho-chi' enough by itself and the rest is a distraction? Does the number of visual hints at the VMs 'religiosity' imply that any 'scientific' illustrations in the VMs might be idiosyncratic or simply weak in their understanding of the contemporary view of early 15th Century, medieval science?

The cross at the top of the diagram could allude to the cross-bearing orb (globus cruciger), a symbol of temporal and spiritual power that is often see in medieval works of art.

The VMs illustration is clearly a 'four-way' diagram, not a 'three-way' diagram. Assuming "father, son, and holy ghost', what is the 'fourth' way that is relevant to the time of the C-14 dates? The obvious answer has to be the 'Virgin Mary'. There have been various prior suggestions of disguised Mariology, from VMs Virgo and the Virgin to the Moon inside the Wreath of the Virgin.

If there is a letter 'U', perhaps it is for the Latin 'uxor' which is 'wife'. Granted, the idea of the "wife" of God may lean a bit heretical in some circles, particularly in retrospect. However, no one can say that the VMs is a bastion of orthodoxy and there already are various indications of VMs trickery. Perhaps it takes an unusual illustration to depict an unexpected ideology.
